Za’atar Beef Patties
with Protein-Packed Tabbouleh
Let’s unpack this protein-packed tabbouleh. For a slow-carb spin, we’re rethinking the lemony Middle Eastern salad with gently warmed riced cauliflower and hearty legumes mingled with chopped kale. To top that, we’re plumping up the za’atar-spiced ground beef patties with almond flour.
We will send you:
- 250g Canadian-raised lean ground beef
- 200g Cauliflower ‘rice’ (chopped cauliflower)
- 1 Lemon
- ½ Bunch of kale
- 1 Garlic clove
- 30g Almond flour
- 1 Roasted pepper
- 398ml Chickpeas (canned)
- 10g Za’atar (sesame seeds, oregano, basil, thyme, savory, lemon peel, marjoram, kosher salt)

Preparation

Sauté the cauliflower rice & chickpeas
- In a large pan, heat a drizzle of oil on medium.
- Add the cauliflower rice and sauté, 6 to 8 min., until softened; season with S&P.
- Add the chickpeas and ¼ of the za'atar. Sauté, 1 to 2 min., until warmed through.
- Transfer to a medium bowl. Wipe out and reserve the pan.

Mise en place
- Meanwhile, remove the kale leaves from the stems; roughly chop the leaves. In a large bowl, combine the kale, a drizzle of oil and S&P. Massage, 1 to 2 min., until softened.
- Roughly chop the garlic.
- Halve the lemon; juice ½ and quarter the remaining ½.
- Medium-dice the roasted pepper.

Prepare the patties
- In a second medium bowl, combine the beef, garlic, almond flour, 1 egg (double for 4 portions), remaining za'atar and S&P.
- Form into 6 patties (double for 4 portions).

Cook the patties
- In the reserved pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, 3 to 5 min. per side, until cooked through.

Make the tabbouleh
- Meanwhile, to the bowl of kale, add the cauliflower rice, chickpeas, roasted pepper and lemon juice; toss well.

Plate your dish
- Divide the tabbouleh between your plates.
- Top with the patties.
- Garnish with the lemon wedges. Bon appétit!
