Vietnamese Caramelized Pork & Hidden Pear
with Seasoned Green Beans
We’re riffing on caramelized pork, a Vietnamese specialty prized for its sticky, slow-cooked qualities. This family-friendly recipe owes its tempting sweetness to grated pear that mingles with ground pork, as well as to sweet soy sauce that kids can’t get enough of.

- 510g Canadian-raised lean ground pork
- 1 Pear
- 1 Lime
- 20g Ginger
- 400g Green beans (or string peas)
- 320g White rice
- 30ml Sweet soy sauce
- 24g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation
Cook the rice
- Preheat the oven to 450°F.
- In a medium pot, combine the rice, 2 ½ cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Mise en place
- Meanwhile, remove the stem ends of the green beans; halve crosswise.
- Halve the lime; juice ½ and quarter the remaining ½.
- Peel and grate the ginger.
- Grate the pear.
Roast the green beans
- On a lined sheet pan, toss the green beans with a drizzle of oil, ½ the spices and black pepper.
- Roast, 5 to 8 min., until crisp-tender.
Cook the pork
- Meanwhile, in a large pan, heat a generous drizzle of oil on medium-high.
- Add the ginger and sauté, 30 sec. to 1 min. until fragrant.
- Add the pork* and pear; season with the remaining spices.
- Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.
- Add the soy sauce, lime juice and S&P.
- Cook, stirring often, 1 to 2 min., until combined.
Plate your dish
- Divide the rice between your plates.
- Top with the pork and green beans.
- Garnish with the lime wedges. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
