Vegan Teriyaki Noodle Bowls
with Garlic-Sautéed Veggies & Peanuts
Cooking smart is all about using your noodle! Easy Prep means streamlining the steps to supper, by relying on as many ready-to-go elements as possible. A few chops to the bok choy, and it joins whole string peas and pre-sliced mushrooms in the pan. Sautéed with garlic, the tender-crisp veggies mingle with almost-instant fresh Shanghai noodles for a tumble in teriyaki glaze. Chopped peanuts are the crunch-cherry on top.

- 100g Sugar snap peas (or snow peas)
- 1 Lime
- 225g Sliced mushrooms

- 225g Fresh Shanghai noodles
- 60ml Teriyaki glaze
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Preparation

Mise en place
Bring a large pot of salted water to a boil. Remove the root ends of the bok choy; roughly chop. Remove the stem ends of the string peas. Cut the lime into 6 wedges.

Boil the noodles
Add the noodles to the pot of boiling water; stir gently to separate. Boil, 5 to 7 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Sauté the vegetables
Meanwhile, in a large pan, heat a generous drizzle of oil on medium-high. Sauté the mushrooms, 3 to 4 min., until beginning to brown. Add the bok choy, string peas, garlic, spices and S&P. Sauté, 2 to 3 min., until wilted and tender.

Combine the noodles
To the pan of vegetables, add the noodles, teriyaki glaze, reserved cooking water (start with ½) and juice of 2 lime wedges (double for 4 portions). Cook, stirring occasionally, 30 sec. to 1 min., until combined and warmed through.

Plate your dish
Divide the noodles between your bowls. Garnish with the peanuts and remaining lime wedges. Bon appétit!
