We encourage you to stand back and enjoy the scent of these pies baking in the oven. Traditional tourtière seasonings—cinnamon, allspice and savoury herbs—give the faux-meat filling a special warmth. We’re even sprinkling some onto the egg wash that makes the dough shine.

Preparation

Mise en place

  • Preheat the oven to 450°F.

  • Halve, peel and mince the shallot.

  • Crumble the patties.

  • Grate the carrots.

  • Roughly chop the lettuce.

Make the filling

  • In a medium pan, heat a drizzle of oil on medium.

  • Add the shallot and sauté, 1 to 2 min., until fragrant.

  • Add the crumbled patties, peas and ½ the spices.

  • Cook, stirring occasionally, 3 to 5 min., until beginning to brown.

  • Set aside to cool.

Prepare the hand pies

  • Meanwhile, divide the dough into 4 balls.

  • On a lightly oiled work surface, roll or spread each ball into 5-inch rounds.

  • Divide the filling between the rounds, leaving a 1-inch border free around the edges.

  • Pull the edges of the dough over the filling and pinch to seal.

  • Arrange the buns, seam-sides down, on a lined sheet pan drizzled with oil.

Bake the hand pies

  • In a small bowl, beat 1 egg (double for 4 portions) until smooth.

  • Brush the hand pies with the egg.

  • Sprinkle with the remaining spices.

  • Bake, 12 to 15 min., until golden brown and cooked through.

Make the salad

  • Meanwhile, in a large bowl, whisk the vinegar, honey, 2 tbsp oil (double for 4 portions) and S&P.

  • Add the lettuce and carrots; toss well.

  • Divide the hand pies and salad between your plates. Bon appétit!
