Teriyaki Ground Beef Sauté
with Broccoli & Green Beans
A kid-friendly supper on every level. The savoury-sweet mixture of minced meat and tender-crisp green veggies is approachable for even the littlest diners. It’s also a good starter recipe for aspiring young cooks, ready to give stir-frying and rice-making a try.

- 2 Scallions
- 1 Head of broccoli
- 300g Green beans (or string peas)
- 30ml Rice vinegar
- 120ml Teriyaki glaze
- 320g White rice

Preparation
Cook the rice
- In a medium pot, combine the rice, 2 ½ cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Start the beef
- Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the beef; season with S&P.
- Cook, breaking up the meat, 2 to 3 min., until beginning to brown.
Mise en place
- Meanwhile, cut the broccoli head into bite-size florets.
- Remove the stem ends of the green beans; halve crosswise.
- Thinly slice the scallions crosswise.
Finish the beef & make the sauté
- To the pan, add the broccoli and cook, covered, stirring occasionally, 3 to 4 min., until partially cooked and the beef* is cooked through.
- Add the green beans and cook, covered, stirring occasionally, 3 to 5 min., until crisp-tender.
- Add the teriyaki glaze, vinegar, 2 tbsp water and black pepper.
- Cook, stirring occasionally, 2 to 3 min., until combined.
- If the sauce seems dry, gradually add ¼ cup water until you achieve your desired consistency; season with S&P.
Plate your dish
- Divide the rice between your bowls.
- Top with the sauté.
- Garnish with the scallions. Bon appétit!
