  • 120ml Teriyaki glaze

Preparation

Cook the rice

  • In a medium pot, combine the rice, 2 ½ cups water and a big pinch of salt; bring to a boil.

  • Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.

  • Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Start the beef

  • Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.

  • Add the beef; season with S&P.

  • Cook, breaking up the meat, 2 to 3 min., until beginning to brown.

Mise en place

  • Meanwhile, cut the broccoli head into bite-size florets.

  • Remove the stem ends of the green beans; halve crosswise.

  • Thinly slice the scallions crosswise.

Finish the beef & make the sauté

  • To the pan, add the broccoli and cook, covered, stirring occasionally, 3 to 4 min., until partially cooked and the beef* is cooked through.

  • Add the green beans and cook, covered, stirring occasionally, 3 to 5 min., until crisp-tender.

  • Add the teriyaki glaze, vinegar, 2 tbsp water and black pepper.

  • Cook, stirring occasionally, 2 to 3 min., until combined.

  • If the sauce seems dry, gradually add ¼ cup water until you achieve your desired consistency; season with S&P.

Plate your dish

  • Divide the rice between your bowls.

  • Top with the sauté.

  • Garnish with the scallions. Bon appétit!
