Birria is beyond delicious—you think about that slow-cooked treat from the Mexican state of Jalisco, and you want it, like, now! So it’s a good thing these tacos are ready in 10, thanks to the pre-cooked spiced beef filling, boosted with cubes of butternut.

  • 150g Shredded cabbage
  • 1 Lime
  • 57g Avocado purée
  • 43ml Sour cream
  • 6 Corn tortillas

Preparation

Sauté the vegetables

  • Preheat the oven to 450°F.

  • In a medium pan, heat a drizzle of oil on medium.

  • Add the squash and onions. Sauté, 5 to 6 min., until beginning to soften; season with S&P.

  • Meanwhile, halve the lime; juice ½ and quarter the remaining ½.

  • In a small bowl, combine the avocado purée, ½ the sour cream, 1 tbsp water (double for 4 portions) and S&P.

  • In a medium bowl, make the slaw by combining the lime juice, remaining sour cream and S&P. Add the cabbage; toss well.

Warm the beef

  • To the pan, add the beef and 2 tbsp water (double for 4 portions).

  • Cook, breaking up the meat, 2 to 3 min., until combined and warmed through.

Toast the tortillas & serve

  • Arrange the tortillas on a sheet pan and toast in the oven, 1 to 3 min., until soft and pliable.

  • Divide the tortillas between your plates.

  • Top with the beef, vegetables and slaw.

  • Dollop with the avocado cream.

  • Garnish with the lime wedges. Bon appétit!
