Suppertime goes off with a bang! This sauté of ground pork and yellow wax beans is a real firecracker, jammed with lots of heat, umami and ginger. It joins crisp lettuce leaves and cucumbers for carb-smart refreshment, under a scattering of sesame seeds.

  • 1 Head of curly leaf lettuce

Preparation

Toast the sesame seeds

  • Heat a large, dry pan on medium.

  • Add the sesame seeds and toast, stirring often, 1 to 2 min., until lightly browned and fragrant.

  • Transfer to a small bowl and reserve the pan.

Start the pork

  • In the same pan, heat a generous drizzle of oil on medium-high.

  • Add the pork; season with S&P.

  • Cook, breaking up the meat, 3 to 5 min., until browned and almost cooked through.

Mise en place

  • Meanwhile, peel and grate the ginger.

  • Halve, peel and small-dice the shallot.

  • Remove the stem ends of the wax beans; cut crosswise into thirds on an angle.

  • Separate the lettuce leaves.

  • Halve the cucumbers lengthwise; thinly slice crosswise on an angle.

Dress the cucumbers

  • In a large bowl, combine the vinegar, a drizzle of oil and S&P.

  • Add the cucumbers; toss well.

Finish the pork & cook the wax beans

  • Reduce the pan of pork to medium.

  • Add the ginger and shallot. Cook, stirring often, 30 sec. to 1 min., until fragrant.

  • Add the wax beans, 2 tbsp water (double for 4 portions) and S&P. Cook, partially covered, stirring occasionally, 3 to 5 min., until crisp-tender and the pork* is cooked through.

  • Add the nutritional yeast and sambal oelek (add ½ or ¼ for medium spicy). Cook, stirring often, 30 sec. to 1 min., until combined.

Plate your dish

  • Divide the lettuce leaves between your plates.

  • Top with the pork, wax beans and cucumbers.

  • Garnish with the sesame seeds. Bon appétit!
