Junior souvlaki pita makers, we’re looking at you. The chicken thighs are grilled with Greek seasonings, the tomatoes are chopped, and the hummus is ready to go. Lay it all out and wrap it all up for a hearty and handheld backyard meal.

  • 300g Shredded cabbage
  • 1 Lemon
  • 2 Tomatoes
  • 90ml Mayonnaise
  • 120g Hummus
  • 4 Artisanal pita
  • 10g Weekend on Mykonos spices (parsley, oregano, dill, onion powder, garlic powder, kosher salt)

Preparation

Grill the chicken

  • Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.

  • Pat the chicken* dry; rub with the spices, a drizzle of oil and S&P.

  • Add to the BBQ (or pan) and grill, 4 to 6 min. per side, until cooked through.

  • Transfer to a plate.

  • Meanwhile, halve the lemon; juice ½ and quarter the remaining ½.

  • Thinly slice the tomatoes.

Grill the pita

  • Drizzle the pita lightly with oil.

  • Add to the BBQ (or pan) and grill, 30 sec. to 1 min. per side, until lightly browned.

Make the slaw

  • In a large bowl, combine the lemon juice, mayo, a drizzle of oil and S&P.

  • Add the cabbage; toss well.

Plate your dish

  • Divide the pita between your plates.

  • Spread with the hummus.

  • Top with a spoonful of the slaw, the tomatoes and chicken. Tightly wrap the pita around the filling if desired.

  • Garnish with the lemon wedges.

  • Serve the remaining slaw on the side. Bon appétit!
