Sneaky Squash Quesadillas
with Black Bean & Tomato Salad
Mozzarella cheese and butternut squash have each other’s back in these golden quesadillas. And that means we’ve got your back, when it comes to getting good hearty veggies into little bodies. (Bonus: the salad is full of nutritious proteins, too!)

- 300g Diced butternut squash
- 2 Tomatoes
- 1 Lime
- 2 Garlic cloves
- 398ml Black beans (canned)
- 120g Grated mozzarella
- 12 Wheat flour tortillas
- 11g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, tapioca starch, coriander seeds, black pepper, cumin, onion, oregano, citric acid, cellulose, lime oil)

Preparation

Microwave the squash
- Preheat the oven to 450°F.
- In a medium bowl, combine the squash, ½ the spices, 2 tbsp water and a drizzle of oil.
- Cover with plastic wrap. Microwave, 5 to 7 min., until softened.

Mise en place
- Meanwhile, medium-dice the tomatoes.
- Drain and rinse the black beans.
- Roughly chop the garlic.
- Halve the lime; juice ½ and quarter the remaining ½.

Prepare & bake the quesadillas
- To the bowl of squash, add the cheese and ½ the black beans; toss well.
- Place the tortillas on a dry work surface.
- Top half of each tortilla with the squash-bean mixture. Fold in half and press lightly.
- Arrange on a lined sheet pan drizzled with oil and drizzle the quesadillas with oil. Lightly flatten to keep intact.
- Bake, flipping halfway, 12 to 14 min., until beginning to brown.

Warm the black beans
- Meanwhile, in a large pan, heat a drizzle of oil on medium-high.
- Add the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the remaining black beans and spices, and 1 tbsp water. Sauté, 2 to 3 min., until warmed through.

Make the salad
- In a large bowl, combine the tomatoes, lime juice, black beans and S&P.

Plate your dish
- Divide the quesadillas between your plates.
- Serve the salad on the side.
- Garnish with the lime wedges. Bon appétit!
