We can’t get enough of this pan-crisped halloumi. The sesame seed crust and the squeaky, salty texture are totally in sync. For contrast, the cheese is plated over a colourful salad of baby greens, cherry tomatoes and quinoa, all drizzled with tzatziki.

  • 140g Cherry tomatoes
  • 25g White sesame seeds
  • 95g Red & white quinoa
  • 15ml Apple cider vinegar
  • 125g Halloumi
  • 60g Garlic-cucumber yogurt (tzatziki)
  • 9g Zesty Herbs spices (salt, garlic, dried carrots, spice, red bell pepper, sugar, curry powder (mustard), canola oil, onion, black pepper, lemon oil, citric acid)

Preparation

Cook the quinoa

  • Using a strainer, rinse the quinoa.

  • In a medium pot, combine the quinoa, 1 cup water (double for 4 portions), the spices and a pinch of salt; bring to a boil.

  • Reduce the heat, cover and simmer, 14 to 16 min., until tender.

  • Fluff the quinoa and allow to cool.

Mise en place

  • Meanwhile, halve the tomatoes.

  • Rinse the halloumi and pat dry; thinly slice crosswise into 10 pieces.

Prepare & sear the halloumi

  • Place the sesame seeds on a medium plate.

  • Working one at a time, coat both sides of halloumi in the sesame seeds (pressing to adhere).

  • In a large pan, heat a drizzle of oil on low.

  • Add the halloumi and sear, 1 to 2 min. per side, until golden brown and crispy.

Make the quinoa salad & tzatziki

  • To the pot of quinoa, add the baby greens, tomatoes, a drizzle of oil and S&P; toss well.

  • In a small bowl, combine the tzatziki, vinegar, 1 tbsp water (double for 4 portions) and S&P.

Plate your dish

  • Divide the quinoa salad between your plates.

  • Top with the halloumi.

  • Drizzle with the tzatziki.

  • Garnish with any remaining sesame seeds. Bon appétit!
