When you want to satisfy the small fries in your life, a stir-fry is a sure bet. They’ll be getting their tasty fill in just 10 minutes of cooking time, as you dole out generous portions of sweet, sesame-spiced ground beef. It’s woven with tender-crisp string beans and fresh Shanghai noodles, which have all the wonderfully slurpy and chewy qualities that kids enjoy. A scattering of roasted cashews comes in for crunch.

Preparation

Boil the noodles & string beans
Bring a large pot of salted water to a boil. Remove the stem ends of the string beans; cut into 1-inch pieces. Add the noodles to the pot of boiling water; stir gently to separate. Boil, 5 to 7 min., until al dente. In the final 2 to 3 min., add the string beans. Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

Cook the beef
Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high. Add the beef*, onions and garlic; season with the spices. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Make the stir-fry
To the pan of beef, add the noodles and string beans, the vinegar, soy sauce and ½ the reserved cooking water. Cook, stirring frequently, 1 to 2 min., until combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish
Divide the stir-fry between your bowls. Garnish with the cashews. Bon appétit!
