Quick Ground Beef Stew
with Garlic Butter Crostini
Everything you love about shepherd’s pie in a soothing bowl of stew, brimming with plentiful ground beef, carrots and peas. The best part is sinking oven-crisped garlic ciabatta into the deeply savoury roasted garlic broth, and then sinking your teeth into it.

- 24g Beef demi-glace
- 30g Minced roasted garlic

Preparation

Make the garlic butter
- Preheat the oven to 450°F.
- In a small bowl, microwave 4 tbsp butter, in 15 sec. increments, until melted.
- Add the garlic; stir well.

Make the crostini
- Halve the ciabatta horizontally.
- Arrange on a sheet pan and brush with the garlic butter; season with S&P.
- Bake, 5 to 8 min., until beginning to crisp.
- Set aside to cool.

Mise en place
- Meanwhile, halve the carrots lengthwise; thinly slice crosswise.
- Halve, peel and small-dice the onion.

Start the stew
- In a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the beef; season with S&P. Cook, breaking up the meat, 2 to 3 min., until lightly browned.

Finish the stew
- To the pan of beef, add the onion, spices and 2 tbsp butter. Cook, stirring often, 1 to 3 min., until fragrant.
- Add the carrots, demi-glace and 1 ¼ cups water; bring to a boil.
- Reduce to a simmer and cook, partially covered, stirring occasionally, 5 to 7 min., until tender and the beef* is cooked through.
- Add the peas and cook, stirring occasionally, 1 to 2 min., until warmed through.
- If the sauce seems dry, gradually add ½ cup water until you achieve your desired consistency; season with S&P.

Plate your dish
- Divide the stew between your bowls.
- Serve the crostini on the side. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
