When you’re feeling low—on time, energy, ideas—lo mein is just the family meal you need. This quick Chinese classic relies on fresh, stretchy noodles to set the stage for plentiful morsels of browned ground beef, green beans and celery, all coated in a tasty teriyaki glaze.

Boil the noodles

  • Bring a large pot of salted water to a boil.

  • Add the noodles; stir gently to separate.

  • Boil, 2 to 4 min., until al dente.

  • Drain and rinse.

  • Toss with a drizzle of oil to prevent sticking.

Mise en place

  • Meanwhile, remove the stem ends of the green beans; halve crosswise on an angle.

  • Thinly slice the celery crosswise on an angle.

  • Thinly slice the scallion crosswise.

Start the lo mein

  • In a large, high-sided pan, heat a drizzle of oil on medium-high.

  • Add the beef; season with the spices. Cook, breaking up the meat, 2 to 3 min., until partially browned.

  • Add the green beans, celery and ¼ cup water. Cook, stirring often, 4 to 6 min., until the vegetables begin to soften and the beef* is cooked through.

Finish the lo mein

  • To the pan, add the teriyaki glaze and ½ cup water.

  • Cook, stirring often, 2 to 3 min., until combined.

  • If the sauce seems dry, add up to ½ cup water; season with black pepper.

Plate your dish

  • Divide the lo mein between your bowls.

  • Garnish with the scallions. Bon appétit!
