They go into making extra-tasty plates of garlicky ground beef keftedes—certified organic, so they’re better for you and the environment—, loosely shaped and quickly pan-browned, accompanied by roasted zucchini and red onions for keto colour.

Preparation

Roast the vegetables

  • Preheat the oven to 450°F.

  • Halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle.

  • On a lined sheet pan, toss the zucchini and onions with a drizzle of oil, ½ the spices and S&P.

  • Roast, stirring halfway, 7 to 9 min., until browned and tender.

  • Transfer to a medium bowl.

Mise en place

  • Meanwhile, halve the lemon; juice ½ and quarter the remaining ½.

  • Pick the mint leaves off the stems; finely chop the leaves.

Prepare & cook the keftedes

  • In a large bowl, combine the beefgarlic½ the cheese½ the mint, the remaining spices and S&P.

  • Roughly form into 10 meatballs (double for 4 portions).

  • In a medium pan, heat a drizzle of oil on medium-high.

  • Add the keftedes* and cook, partially covered, turning occasionally, 6 to 8 min., until browned and cooked through.

Dress the vegetables

  • To the bowl of zucchini and onions, add the lemon juice, and remaining mint and cheese; toss well.

Plate your dish

  • Divide the vegetables and keftedes between your plates.

  • Garnish with the lemon wedges. Bon appétit!
