Protein Swap | Salsa Verde Turkey Taquitos
with Brussels Sprouts Slaw
When the goal is golden and crisp, the Air Fryer is the way to go. Tacos are on a roll when you wrap tortillas around a Mexican-spiced ground turkey filling, moist and tangy with plentiful tomatillos. Don’t forget the lime sour cream slaw!

- 285g Canadian-raised extra lean ground turkey
- 225g Tomatillos
- 200g Brussels sprouts
- 1 Lime
- 43ml Sour cream
- 6 Wheat flour tortillas
- 22g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, tapioca starch, coriander seeds, black pepper, cumin, onion, oregano, citric acid, cellulose, lime oil)

Preparation
Mise en place
- Preheat the air fryer to 400°F. Lightly oil the basket.
- Remove the husks from the tomatillos; medium-dice.
- Halve the lime; juice ½ and quarter the remaining ½.
- Halve the Brussels sprouts lengthwise, thinly slice crosswise.
Cook the beef
- In a large pan, heat a drizzle of oil on medium-high.
- Add the tomatillos and sauté, 30 sec. to 1 min., until slightly softened.
- Add the beef*; season with the spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.
Prepare the taquitos
- Place the tortillas on a clean work surface.
- Divide the beef between the tortillas and tightly roll up.
Fry the taquitos
- Place the taquitos in the air fryer, seams-side down, and brush lightly with oil.
- Fry, 4 to 6 min., until golden brown and crispy.
Make the slaw
- Meanwhile, in a large bowl, combine the sour cream, lime juice, a drizzle of oil and S&P.
- Add the Brussels sprouts; toss well.
Plate your dish
- Divide the taquitos and slaw between your plates.
- Garnish with the lime wedges. Bon appétit!
