Ten minutes are all you need to cook up cheerful bowls of casual comfort food. Thick and chewy, snug and snappy, udon noodles get straight to the point and stick to it. Namely, to a delicious coating of sweet soy sauce and rice vinegar. They’ll tumble around with sautéed mushrooms and cabbage, plus some subtle heat from chopped kimchi. Ground beef, browned with sweet sesame-flecked spices, grounds the whole meal.

Sauté the vegetables & start the beef
Bring a medium pot of salted water to a boil. In a large pan, heat a generous drizzle of oil on medium-high. Add the mushrooms and cabbage. Sauté, 2 to 3 min., until beginning to caramelize. Add the beef; season with the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until browned and partially cooked.

Boil the noodles
Meanwhile, add the noodles to the pot of boiling water and boil, 6 to 8 min., until al dente. Drain and toss with a drizzle of oil to prevent sticking.

Meanwhile, thinly slice the scallion crosswise. Roughly chop the kimchi.

Finish the beef & combine the noodles
To the pan of vegetables and beef, add the noodles, kimchi, vinegar, soy sauce and 2 tbsp water (double for 4 portions). Cook, stirring frequently, 1 to 2 min., until the beef* is cooked through and the noodles are coated.

Plate your dish
Divide the noodles between your bowls. Garnish with the scallion. Bon appétit!
