Protein Swap | Quick Chicken Farro Bowls
with Apple & Kale
No need to search very farro for an excellent winter salad! The ancient wheat brings a nutritious boost to this brilliantly easy 15-minute dish, with tons of extra texture from our nuts and seeds topper. Everything is swept up in a whipped balsamic dressing.

- 2 Canadian-raised chicken breasts (air chilled)
- 120g Chopped kale
- 57g Diced apples
- 25g Nuts & Seeds salad topper
- 227g Pre-cooked farro
- 45ml Rich, Snappy Whipped Balsamic vinaigrette

You will need:
Large pan
Microwave
Oil
Salt & pepper (S&P)

Preparation
Cook the chicken
- Pat the chicken dry; season with S&P.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the chicken* and cook, partially covered, 2 to 3 min. per side, until cooked through.
Warm the farro
- Meanwhile, poke small holes in the bag of farro.
- Microwave, 1 ½ to 2 min., until heated through.
- Transfer to a bowl.
Make the salad
- To the bowl of farro, add the kale, apples, salad topper, vinaigrette and S&P; toss well.
Plate your dish
- Divide the salad between your bowls.
- Top with the chicken. Bon appétit!
