This one-pan plan really pans out! It easily assembles just the right meat and veg for a sprinkling of our Marvellous Masala blend, brimming with coriander, ginger, cumin, fennel and star anise (no wonder it’s a culinary team fave). The chicken breasts reach peak tenderness thanks to a quick yogurt-based marinade, while the baby potatoes and Brussels sprouts come out beautifully burnished. A crunchy cucumber salad with raita dressing rewards with cool contrast between bites.

- 60g Garlic-cucumber yogurt (raita)
- 12g Marvellous Masala spices (garlic purée, coriander powder, sea salt, paprika, ginger purée, turmeric, cumin powder, cumin seeds, black peppercorns, cinnamon, star anise, fennel seeds, coriander seeds)

Preparation

Mise en place
Preheat the oven to 450°F. Quarter the potatoes. Remove the root ends of the Brussels sprouts; halve lengthwise (quarter if large). Pat the chicken dry with paper towel; season with ⅔ of the spices and S&P. In a medium bowl, combine the chicken, ⅓ of the raita and a drizzle of oil.

Roast the traybake
On a lined sheet pan, toss the potatoes and Brussels sprouts with a drizzle of oil, the remaining spices and S&P. Add the chicken and roast, stirring and flipping halfway, 20 to 25 min., until the chicken* is cooked through and the vegetables are tender.

Make the raita-cucumber salad
Meanwhile, halve the cucumbers lengthwise; thinly slice crosswise on an angle. In a small bowl, combine the cucumbers, remaining raita and S&P.

Plate your dish
Divide the traybake between your plates. Serve the cucumber-raita salad on the side. Bon appétit!
