Protein Swap | Ground Beef Carne Street Tacos
with Tomatillo Salsa Cruda & Brussels Slaw
An order of meaty tacos from a street stall is pure Mexican pleasure. Let’s recreate them with ground beef, engulfed in warm spices, shredded cheese and shaved Brussels sprouts shot through with lime. Switch up tomato salsa cruda for freshly chopped tomatillos.

- 250g Canadian-raised lean ground beef
- 300g Brussels sprouts
- 1 Lime
- 225g Tomatillos
- 7g Honey
- 15ml Tomato paste
- 60g Grated aged cheddar
- 6 Wheat flour tortillas
- 11g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, tapioca starch, coriander seeds, black pepper, cumin, onion, oregano, citric acid, cellulose, lime oil)

Preparation

Mise en place
- Remove the husks from the tomatillos; halve and then grate. Place in a medium bowl and drain any excess liquid.
- Halve the Brussels sprouts lengthwise, then thinly slice crosswise.
- Juice the lime. In a small bowl, combine with the honey.
- Crumble the patties.

Cook & coat the crumbled patties
- In a medium pan, heat a drizzle of oil on medium.
- Add the crumbled patties and cook, stirring occasionally, 3 to 5 min., until beginning to brown; season with the spices and S&P.
- Add the tomato paste and cook, stirring often, 1 to 2 min., until dark red.
- Add ⅓ cup water (double for 4 portions) and cook, stirring often, 2 to 3 min., until the crumbled patties are coated.

Make the salsa verde cruda
- To the bowl of tomatillos, add a drizzle of oil and S&P; stir well.

Make the slaw
- In a large bowl, combine the Brussels sprouts, lime-honey mixture, a drizzle of oil and S&P.

Warm the tortillas
- Wrap the tortillas in a slightly dampened paper towel.
- On a plate, microwave, in 10 sec. increments, until warm.

Plate your dish
- Divide the tortillas between your plates.
- Top with the crumbled patties, salsa verde cruda, slaw and cheese. Bon appétit!
