Protein Swap | Grilled Chicken Shish Taouk Skewers
with Zesty Hummus & Cucumber Salad
Super juicy and super tender, these chicken and zucchini skewers bring a burst of tastiness with every bite, thanks to Middle Eastern-inspired spices. Tuck your expertly grilled goods into warm pita along with lemon-zinged hummus and a punchy chopped cucumber salad.
We will send you:
- 2 Canadian-raised chicken breasts (air chilled)
- 1 Lemon
- 2 Cucumbers
- 1 Green zucchini
- 120g Hummus
- 2 Pita
- 4 Bamboo skewers
- 3.5g White Pepper & Pimenta spices (white pepper, allspice, garlic, nutmeg, cinnamon)

Preparation

Mise en place
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Place the skewers in a shallow bowl; cover with water.
- Thinly slice the zucchini crosswise. In a medium bowl, toss with a drizzle of oil and S&P.
- Zest and juice the lemon.
- Halve the cucumbers lengthwise; smash until slightly flattened.

Prepare & grill the chicken skewers
- Pat the chicken dry and cut into bite-size pieces. In a second medium bowl, toss with the spices, ½ the lemon juice, a drizzle of oil and S&P.
- Drain the skewers and thread each one with the chicken and zucchini, alternating between each, leaving 1-inch free on the bottom.
- Add the chicken skewers* to the BBQ (or pan) and grill, 2 to 3 min. per side, until cooked through.

Make the salad & lemon hummus
- Meanwhile, in a third medium bowl, combine the cucumbers, remaining lemon juice, a drizzle of oil and S&P.
- In a small bowl, combine the hummus, lemon zest (start with ½) and S&P.

Grill the pita
- Add the pita to the BBQ (or pan) and grill, 30 sec. to 1 min., until just warmed through.

Plate your dish
- Divide the pita between your plates.
- Spread with the lemon hummus.
- Top with the chicken, zucchini and a spoonful of the salad.
- Tightly wrap the pita around the filling.
- Serve the remaining salad on the side. Bon appétit!
