  • 1 Onion (or shallot)
  • 225g Baby potatoes
  • 2 Celery stalks
  • 100g Nantes carrots
  • 3 Garlic cloves
  • 150g Green peas
  • 3g Smoked paprika
  • 540ml Lentils (canned)
  • 12g Chicken demi-glace
  • 45ml Tomato paste

Preparation

Cook the chorizo

  • In a large, high-sided pan, heat a generous drizzle of oil on medium-high.

  • Add the chorizo* and cook, breaking up the meat, 4 to 6 min., until browned and cooked through.

  • Transfer to a bowl, leaving any browned bits in the pan. Reserve the pan.

Mise en place

  • Meanwhile, medium-dice the potatoes.

  • Small-dice the celery

  • Halve, peel and small-dice the onion.

  • Halve the carrots lengthwise, thinly slice crosswise.

  • Mince the garlic.

  • Drain and rinse the lentils.

Start the stew

  • Heat the reserved pan on medium.

  • Add the onion, carrots and celery. Sauté, 4 to 5 min., until beginning to soften.

  • Add the garlic, smoked paprika and sauté, 1 to 2 min., until fragrant.

Finish the stew

  • To the pan, add the demi-glace, potatoes, tomato paste, chorizo, 5 cups water (double for 4 portions) and S&P; bring to a boil.

  • Reduce to medium low and add the lentils.

  • Cover and cook, 12 to 15 min., until the potatoes are tender.

  • Add the peas and cook, stirring occasionally, 2 to 3 min., until heated through.

Plate your dish

  • Divide the stew between your bowls. Bon appétit!
