- 2 Canadian-raised chicken breasts (air chilled)
- 1 Sweet pepper
- 2 Garlic cloves
- 14g Parsley
- 1 Onion (or shallot)
- 100ml Tomato sauce
- 3g Smoked paprika
- 398ml White kidney beans (canned)

Preparation

Start the pork
- Pat the pork dry; season with S&P.
- In a medium pot, heat a drizzle of oil on medium-high.
- Add the pork and cook, 2 to 3 min. per side, until partially cooked.
- Transfer to a plate and reserve the pot.

Mise en place
- Meanwhile, halve, peel and small-dice the onion.
- Roughly chop the parsley leaves and stems.
- Mince the garlic.
- Halve, core and medium-dice the sweet pepper.
- Drain and rinse the kidney beans.

Start the stew
- In the reserved pot, heat a drizzle of oil on medium.
- Add the onion and sauté, 3 to 4 min., until translucent.
- Add the sweet pepper and sauté, 1 to 2 min., until beginning to soften.
- Add the garlic and smoked paprika. Sauté, 30 sec. to 1 min., until fragrant.

Finish the stew & pork
- To the pot, add the tomato sauce, kidney beans, ½ cup water (double for 4 portions) and S&P.
- Cook, stirring occasionally, 3 to 4 min., until beginning to thicken.
- Add the pork* and cook, partially covered, 3 to 4 min., until cooked through.
- Add 3 to 4 tbsp water (double for 4 portions) until you achieve your desired consistency.

Plate your dish
- Divide the stew and pork (slice beforehand if desired) between your plates.
- Garnish with the parsley. Bon appétit!
