  • 1 Sweet pepper
  • 2 Garlic cloves
  • 14g Parsley
  • 1 Onion (or shallot)
  • 100ml Tomato sauce
  • 3g Smoked paprika
  • 398ml White kidney beans (canned)

Preparation

Start the pork

  • Pat the pork dry; season with S&P.

  • In a medium pot, heat a drizzle of oil on medium-high.

  • Add the pork and cook, 2 to 3 min. per side, until partially cooked.

  • Transfer to a plate and reserve the pot.

Mise en place

  • Meanwhile, halve, peel and small-dice the onion.

  • Roughly chop the parsley leaves and stems.

  • Mince the garlic.

  • Halve, core and medium-dice the sweet pepper.

  • Drain and rinse the kidney beans.

Start the stew

  • In the reserved pot, heat a drizzle of oil on medium.

  • Add the onion and sauté, 3 to 4 min., until translucent.

  • Add the sweet pepper and sauté, 1 to 2 min., until beginning to soften.

  • Add the garlic and smoked paprika. Sauté, 30 sec. to 1 min., until fragrant.

Finish the stew & pork

  • To the pot, add the tomato sauce, kidney beans, ½ cup water (double for 4 portions) and S&P.

  • Cook, stirring occasionally, 3 to 4 min., until beginning to thicken.

  • Add the pork* and cook, partially covered, 3 to 4 min., until cooked through.

  • Add 3 to 4 tbsp water (double for 4 portions) until you achieve your desired consistency.

Plate your dish

  • Divide the stew and pork (slice beforehand if desired) between your plates.

  • Garnish with the parsley. Bon appétit!
