Goodfood goes global! We’re travelling the world in search of culinary inspiration, and bringing you our best finds. Next stop: Lebanon, where meat-stuffed pita, grilled to crispy, is a top street food. We set off the warm spices with garlic sauce and a lemon-mint salad.

  • 50g Diced onions
  • 14g Mint
  • 15ml Minced garlic
  • 2 Cucumbers
  • 1 Tomato
  • 60ml Mayonnaise
  • 15ml Tahini
  • 2 Pita
  • 7g White Pepper & Pimenta spices (white pepper, allspice, garlic, nutmeg, cinnamon)
  • 30ml Lemon juice

Preparation

Prepare & roast the arayes

  • Preheat the oven to 425°F.

  • Crumble the patties.

  • In a medium bowl, combine the crumbled patties, onions, ⅔ of the garlic, the spices (start with ¾ for a milder flavour) and S&P.

  • Halve the pita and carefully open the pocket; fill with the patty mixture and spread evenly.

  • Brush both sides of the arayes with oil and arrange on a lined sheet pan.

  • Roast, flipping halfway, 8 to 10 min., until lightly browned and crisp.

Make the salad

  • Meanwhile, quarter the cucumbers lengthwise; cut crosswise into ½ inch pieces.

  • Medium-dice the tomato.

  • Pick the mint leaves off the stems; roughly chop the leaves.

  • In a second medium bowl, combine the cucumbers, tomato, mint, all but a splash of the lemon juice, a drizzle of oil and S&P.

Make the toum

  • In a small bowl, combine the mayo, tahini, remaining garlic and lemon juice, 1 tbsp water (double for 4 portions) and S&P.

Plate your dish

  • Divide the arayes and salad between your plates.

  • Serve the toum on the side. Bon appétit!
