Protein Swap | Beef Sloppy Joes
with Watercress & Radish Salad
The peppery flavour of watercress (so-called because this delicate dark leafy green is an aquatic plant) is the perfect counterpoint to sweet hickory seasonings and BBQ sauce. Those flavours emanate from our version of sloppy joes, lusciously stuffed into warm hamburger buns.

Preparation
Mise en place
- Thinly slice the radishes.
- Halve, peel and mince the shallot.
- Mince the garlic.
Make the filling
- Crumble the patties.
- In a medium pan, heat a drizzle of oil on medium.
- Add the shallot and garlic. Sauté, 30 sec. to 1 min., until fragrant.
- Add the crumbled patties and cook, stirring occasionally, 3 to 5 min., until beginning to brown; season with the spices.
- Add the BBQ sauce and ¼ cup water (double for 4 portions).
- Cook, stirring often, 1 to 2 min., until combined.
- If the sauce seems dry, add 1 tbsp water at a time until you achieve your desired consistency.
Make the salad
- Meanwhile, in a large bowl, combine the watercress, radishes, vinaigrette and S&P.
Toast the buns & serve
- Warm the buns in the toaster.
- Divide the bun bottoms between your plates.
- Top each bun bottom with the filling, a spoonful of the salad and a bun top.
- Serve the remaining salad on the side. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
