Preparation

Mise en place
Preheat the oven to broil. Halve the zucchini lengthwise; thinly slice crosswise. Core and thinly slice the sweet pepper crosswise.

Cook the chorizo
In a large pan, heat a generous drizzle of oil on medium-high. Add the chorizo* and cook, breaking up the meat, 4 to 6 min., until browned and cooked through.

Sauté the vegetables
Meanwhile, in a second large pan, heat a generous drizzle of oil on medium. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the zucchini and sweet pepper. Sauté, 4 to 6 min., until tender. Add the onions, ½ the spices and S&P; stir well.

Assemble & broil the flatbreads
Arrange the naan on a foil-lined sheet pan. Spread with the tomato sauce. Sprinkle with the remaining spices. Top with the chorizo, vegetables and cheese. Broil, 3 to 5 min., until beginning to brown. Transfer to a cutting board and cut into wedges.

Finish & serve
Pick the basil leaves off the stems. Divide the flatbreads between your plates. Garnish with the basil (tear before adding if desired). Bon appétit!
