Preparation

Roast the broccoli

  • Preheat the oven to 450°F. Bring a medium, oven-safe pot of salted water to a boil.

  • Mince the garlic.

  • Remove the bottom inch of the broccoli stem; peel the stem. Cut the head into long, thin florets, including the stem.

  • On a lined sheet pan, toss the broccoli with a drizzle of oil and S&P.

  • Roast, stirring and adding ½ the garlic halfway, 14 to 16 min., until tender.

Boil the pasta

  • Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.

  • Boil, stirring occasionally, 4 to 6 min., until al dente.


  • Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

  • Reserve the pot.

Make the sauce

  • In the same pot, heat a drizzle of oil on medium-high.

  • Add the garlic and sauté, 30 sec. to 1 min., until fragrant.

  • Add the tomato sauce, pesto and reserved cooking water.

  • Cook, stirring often, 2 to 3 min., until beginning to thicken.

Combine & bake the pasta

  • To the pot, add the pasta;** **stir well.

  • Top with the cheese.

  • Transfer to the oven and bake, 6 to 8 min., until golden brown.

  • Switch the oven to broil, 2 to 3 min., if extra colour is desired.

Plate your dish

  • Divide the pasta between your plates.

  • Serve the broccoli on the side. Bon appétit!
