Mise en place

  • Preheat the oven to broil.

  • Halve the zucchini lengthwise; thinly slice crosswise.

  • Core and thinly slice the sweet pepper crosswise.

Sauté the vegetables

  • In a large pan, heat a generous drizzle of oil on medium.

  • Add the garlic and sauté, 30 sec. to 1 min., until fragrant.

  • Add the zucchini and sweet pepper. Sauté, 4 to 6 min., until tender.

  • Add the onions, ½ the spices and S&P; stir well.

Assemble & broil the flatbreads

  • Arrange the naan on a foil-lined sheet pan.

  • Spread with the tomato sauce.

  • Sprinkle with the remaining spices.

  • Top with the vegetables and cheese.

  • Broil, 3 to 5 min., until beginning to brown.

  • Transfer to a cutting board and cut into wedges.
