Even burgers need a change of pace sometimes. So take these ground pork patties on a trip to Greece for a family-friendly vacay. Herb-flecked patties get golden and juicy in the pan, ready to be slipped into our cushy potato-scallion buns. Mix together tzatziki with roasted pepper for a condiment that covers all the bases, from creamy to tangy. A crafty salad of roasted zucchini, curly leaf lettuce and olives goes inside and out.

- 30g Olives
- 1 Roasted pepper
- 60g Garlic-cucumber yogurt (tzatziki)

- 20g Greek Empire spices (garlic, cumin, paprika, oregano, salt, black pepper, basil)

Preparation

Roast the zucchini
Preheat the oven to 450°F. Halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle. On a lined sheet pan, toss with a drizzle of oil, ⅓ of the spices and S&P. Roast, flipping halfway, 7 to 9 min., until browned and tender.

Prepare & cook the patties
Meanwhile, in a large bowl, combine the pork, remaining spices and S&P. Form into 4 patties. In a large pan, heat a drizzle of oil on medium-high. Add the patties* and cook, 3 to 5 min. per side, until browned and cooked through. Transfer to a plate and keep warm. Wipe out and reserve the pan.

Mise en place
Meanwhile, roughly chop the lettuce and olives. Small-dice the roasted pepper. In a small bowl, combine the tzatziki, roasted pepper and S&P.

Make the salad
In a second large bowl, combine the vinegar and 3 tbsp oil. Add the lettuce, zucchini, olives and S&P; toss well.

Toast the buns
In the reserved pan, heat a drizzle of oil on medium. Add the buns, cut-sides down, and toast, 1 to 2 min., until golden brown.

Plate your dish
Divide the bun bottoms between your plates. Top each bun bottom with the roasted pepper tzatziki, a patty, a spoonful of the salad and a bun top. Serve the remaining salad on the side. Bon appétit!
