Pan-Fried Salmon over Fresh Noodles
with Orange Sauce & Baby Bok Choy
Think smart, think speedy, think simple… think salmon. This recipe flows forward effortlessly from start to finish, and easily rewards you with Asian-themed tastes and textures. Pop fresh noodles into a pot to boil, then toss them in a coating layered with orange sauce and sweet sesame spices, punctuated by baby bok choy and edamame beans. The catch of the day lands on top, pan-fried for a touch of crispness in its pinkness.

- 15ml Minced garlic
- 100g Edamame (or green peas)
- 225g Fresh noodles
- 45ml Orange sauce
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, ginger, black pepper)

Preparation
Mise en place
Bring a medium pot of salted water to a boil. Remove the root ends of the bok choy; cut crosswise into 1-inch pieces.
Boil the noodles
Add the noodles to the pot of boiling water; stir gently to separate. Boil, 2 to 4 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and rinse. Toss with a drizzle of oil to prevent sticking. Reserve the pot.
Cook the salmon
Meanwhile, pat the salmon dry with paper towel; season with ½ the spices and S&P. In a medium pan (non-stick if possible), heat a drizzle of oil on medium-high. Add the salmon* and cook, 2 to 3 min. per side, until browned and cooked as desired.
Make the sauce & combine the noodles
Heat the reserved pot on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the noodles, edamame, bok choy, orange sauce, remaining spices and ½ the reserved cooking water. Cook, stirring frequently, 2 to 3 min., until heated through and combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
Plate your dish
Divide the noodles between your plates. Top with the salmon. Bon appétit!
