Oven-Roasted Spiced Beef Meatballs
with Squash-Potato Mash & Garlicky Green Beans
Want the kids to play ball? Get them working with you to make this winner dinner. You’ll take care of boiling potatoes and butternut squash with cloves of garlic for a flavour infusion. Then your helpers can flex a little muscle to make the soft, buttery mash. Ground beef takes shape with more garlic, sumac-based spices and panko for roasting, while green beans need just a quick sauté before jumping to the table.

Preparation

Make the mash
Preheat the oven to 450°F. Bring a medium pot of salted water to a boil. Peel and medium-dice the potatoes. Using the flat side of your knife, smash 2 garlic cloves. Add the potatoes, squash and smashed garlic to the pot of boiling water and boil, 14 to 16 min., until very tender. Reserving 1 cup cooking water, drain and return to the pot. Off the heat, add 2 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P. Keep warm.

Prepare the meatballs
Meanwhile, mince the remaining garlic cloves. In a large bowl, combine the beef, panko, ½ the minced garlic and ¾ of the spices. Form into 16 meatballs about the size of a golf ball.

Roast the meatballs
Arrange the meatballs* on a lined sheet pan and roast, flipping halfway, 14 to 16 min., until browned and cooked through.

Cook the green beans
Meanwhile, remove the stem ends of the green beans. In a large pan, heat a drizzle of oil on medium-high. Add the green beans and remaining garlic. Sauté, 2 to 3 min., until beginning to soften. Add 2 tbsp water and cook, partially covered, 1 to 2 min., until crisp-tender; season with the remaining spices and S&P.

Finish & serve
In a small bowl, combine the tzatziki and 1 tbsp water. Divide the mash, meatballs, green beans and tzatziki between your plates. Bon appétit!
