Our fresh egg noodles and a good helping of ground beef will get you there in just 10 minutes of cooking time. Brown the meat in a saucepan with aromatic lemongrass and garlic, adding in a lip-smacking sauce that combines peanut butter and sweet soy. Quick-cooking veggies round out each tasty portion, as bright green edamame beans and boiled baby bok choy tangle up in those slurpable strands.

Start the beef
Bring a large pot of salted water to a boil. In a large pan, heat a drizzle of oil on medium. Add the garlic and lemongrass. Sauté, 30 sec. to 1 min., until fragrant. Add the beef; season with the spices. Cook, breaking up the meat, 3 to 4 min., until partially cooked.

Boil the noodles & bok choy
Meanwhile, remove the root ends of the bok choy; roughly chop. Add the noodles to the pot of boiling water; stir gently to separate. Boil, 2 to 4 min., until al dente. In the final 2 min., add the bok choy. Drain and rinse. Toss with a drizzle of oil to prevent sticking.

Make the sauce & finish the beef
Meanwhile, in a small bowl, combine the soy sauce, peanut butter and 1 tbsp water (double for 4 portions). To the pan of beef, add the edamame and sauce; bring to a boil. Reduce the heat to simmer and cook, stirring frequently, 30 sec. to 1 min., until the beef* is cooked through and coated.

To the pan of beef, add the noodles and bok choy. Cook, stirring frequently, 30 sec. to 1 min., until combined.
