He shoots, you score! This winning recipe gets the nod from Nick Suzuki, Montreal Canadiens captain. Keto goes cute-oh with these individualized meatloaves. They may be mini in size but they’re big on protein, once you prepare each plentiful portion with a garlicky mix of ground beef and creamy, salty feta cheese. Set them out in browned slices over a medley of veggies, featuring roasted zucchini along with wilted leafy greens melting into sautéed sun-dried tomatoes for residual sweetness. Top it all off with a taste of tzatziki.

We will send you:

  • 340g Canadian-raised lean ground beef (high-protein serving)
  • 15ml Minced garlic
  • 120g Baby greens (baby spinach or kale)
  • 1 Green zucchini
  • 30g Sliced sun-dried tomatoes
  • 60g Garlic-cucumber yogurt (tzatziki)
  • 60g Feta
  • 7g Paprika & Oregano spices (garlic, paprika, beef bouillon, salt, onion, oregano, black pepper, sunflower oil, thyme, parsley, cinnamon, nutmeg)

Prepare & roast the meatloaves
Preheat the oven to 450°F. In a large bowl, combine the beef, cheese, ½ the garlic and ½ the spices. Form into 2 small loaves* (double for 4 portions). Arrange on a lined sheet pan and roast, 15 to 18 min., until cooked through.

Cook the spinach & tomatoes
Meanwhile, in a large pan, heat a drizzle of oil on medium. Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant. Add the spinach and tomatoes. Cook, partially covered, stirring occasionally, 2 to 3 min., until wilted and warmed through; season with S&P.

Roast the zucchini
Meanwhile, halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle. On a second lined sheet pan, toss with a drizzle of oil, the remaining spices and S&P. Roast, flipping halfway, 7 to 9 min., until browned and tender.
