The kids will love the excuse to get a little messy! The plan is to top oven-baked sweet potato halves with sloppy Joe-style ground beef rich in bourbon- and hickory-infused spices. Serve the fork-soft spuds with a garnish of aged white cheddar, slip in a side of green beans roasted to crisp-tender, and let the devouring begin.

Preparation

Start the vegetables
Preheat the oven to 450°F. Halve the sweet potatoes lengthwise. On a lined sheet pan, toss with a drizzle of oil, ¼ of the spices and S&P. Arrange, cut-sides down, and bake, without flipping, 24 to 28 min., until browned and almost cooked through.

Mise en place
Meanwhile, remove the stem ends of the green beans. In a medium bowl, combine the green beans, a drizzle of oil, ¼ of the remaining spices and S&P.

Cook & coat the beef
In a large pan, heat a drizzle of oil on medium-high. Add the beef; season with S&P. Cook, breaking up the meat, 4 to 5 min., until browned. Add the tomato paste and cook, stirring frequently, 2 to 3 min., until dark red. Add the vinegar, 1 cup water and the remaining spices. Cook, stirring occasionally, 6 to 8 min., until the sauce has thickened and the beef* is coated and cooked through.

Finish the vegetables
When the sweet potatoes have browned, arrange the green beans on a second lined sheet pan. Roast the sweet potatoes and green beans, 8 to 10 min., until the vegetables are crisp-tender.

Plate your dish
Divide the vegetables between your plates. Top the sweet potatoes with the beef. Garnish with the cheese. Bon appétit!
