Minty Pork Keftedes
with Feta, Zucchini & Lemon
We’re dialing up the area code for Greece with these numbers: feta, lemon and fresh mint. They go into making extra-tasty plates of garlicky keftedes, loosely shaped and quickly pan-browned, accompanied by roasted zucchini and red onions for keto colour.

- 3 Green zucchini
- 15ml Minced garlic
- 14g Mint
- 1 Lemon
- 50g Sliced red onions
- 120g Feta
- 7g Paprika & Oregano spices (garlic, paprika, beef broth powder (wheat and sulphites), salt, onion, dextrose, oregano, yeast extract, black pepper, canola oil, cellulose, thyme, parsley, cinnamon, nutmeg, citric acid)

Preparation

Roast the vegetables
- Preheat the oven to 450°F.
- Halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle.
- On a lined sheet pan, toss the zucchini and onions with a drizzle of oil, ½ the spices and S&P.
- Roast, stirring halfway, 7 to 9 min., until browned and tender.
- Transfer to a medium bowl.

Mise en place
- Meanwhile, halve the lemon; juice ½ and quarter the remaining ½.
- Pick the mint leaves off the stems; finely chop the leaves.

Prepare & cook the keftedes
- In a large bowl, combine the pork, garlic, ½ the cheese, ½ the mint, the remaining spices and S&P.
- Roughly form into 10 meatballs (double for 4 portions).
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the keftedes* and cook, partially covered, turning occasionally, 6 to 8 min., until browned and cooked through.

Dress the vegetables
- To the bowl of vegetables, add the lemon juice, and remaining mint and cheese; toss well.

Plate your dish
- Divide the vegetables and keftedes between your plates.
- Garnish with the lemon wedges. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
