There’s a rumour going around that it’s meatballs for supper! Everyone in the family will be happy to hear that this traybake is coming to the table (including the person who’s doing the dishes). Ground pork is bursting with well-rounded flavours from maple syrup, whole-grain mustard and garlic. Chunky baby potatoes roast to soft and golden in a scattering of Greek-inspired herbs, while string beans take little time to achieve tender-crisp.

Preheat the oven to 450°F. Remove the stem ends of the string beans. Medium-dice the potatoes.

Roast the potatoes
On a lined sheet pan, toss the potatoes with a drizzle of oil, ⅓ of the spices and S&P. Roast, stirring halfway, 20 to 25 min., until browned and tender.

Prepare the meatballs
Meanwhile, in a large bowl, combine the pork, mustard, maple syrup, ⅓ of the garlic, the remaining spices and S&P. Form into 16 meatballs about the size of a golf ball.

Roast the meatballs
Arrange the meatballs* on a second lined sheet pan and roast, flipping halfway, 14 to 16 min., until browned and cooked through.

Roast the string beans
Meanwhile, on a third lined sheet pan, toss the string beans with a drizzle of oil, the remaining garlic and S&P. Roast, 5 to 8 min., until crisp-tender.

Divide the meatballs, potatoes and string beans between your plates. Bon appétit!
