Maple Butter Curry Pork Chops
with Roasted Sweet Potatoes & Broccoli
Maple makes eeeeeeverything better. Like browned pork chops, drizzled in a cuisine-melding sauce of mild yellow curry paste and maple butter. With broccoli spears and sweet potato wedges that are soft and fluffy on the inside, this flavour fusion will leave no taste bud untickled!

- 900g Sweet potatoes
- 300g Broccoli florets
- 18g Mild yellow curry paste
- 30ml Maple butter
- 60ml Vegetable demi-glace

Preparation
Mise en place
- Preheat the oven to 450°F.
- Cut the sweet potatoes lengthwise into ½ inch wedges.
- Halve the broccoli if large. In a large bowl, toss with a drizzle of oil and S&P.
Roast the vegetables
- On a lined sheet pan, toss the sweet potatoes with a drizzle of oil, ¼ of the spices and S&P.
- Roast, 12 to 14 min., until beginning to brown.
- Flip and add the broccoli. Roast, 14 to 18 min., until browned and tender.
Cook the pork
- Meanwhile, pat the pork dry; season with ½ the remaining spices and S&P.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the pork* and cook, 3 to 5 min. per side, until nicely browned and cooked through.
- Transfer to a plate, leaving any browned bits in the pan. Reserve the pan.
Make the sauce
- In the same pan, heat a drizzle of oil on medium-high.
- Add the curry paste and cook, stirring constantly, 30 sec. to 1 min., until fragrant.
- Add the maple butter, demi-glace, 1 cup water, 2 tbsp butter and the remaining spices.
- Cook, whisking often, 3 to 4 min., until thickened.
Plate your dish
- Divide the pork (slice beforehand if desired) and vegetables between your plates.
- Spoon the sauce over the pork. Bon appétit!
*Health Canada recommends cooking pork to a minimum internal temperature of 71°C.
