Luscious Pancetta & White Cheddar Chowder
with Broccoli & Green Peas
Wrap your head around 2024 while you wrap your hands around these hearty bowls, filled to the brim with enticing ingredients. This creamy winter chowder gets started with salty-porky nubs of pancetta and onion, soon filled out on the flavour front with cream, demi-glace and aged white cheddar cheese (mmm, it melts right in). It’s also abundant with broccoli florets and green peas for veggie-loving spoonfuls, all conveniently cooked in one pot.

- 450g Potatoes
- 200g Broccoli florets
- 1 Onion (or shallot)
- 150g Green peas
- 30ml Vegetable demi-glace
- 60ml Heavy cream
- 60g Grated aged cheddar
- 6g Zested Peppers spices (sesame seeds, onion, red bell pepper, green bell pepper, salt, parsley, garlic, oregano, basil, dill weed, sweet orange peel, sunflower oil)

Preparation

Cook the pancetta & onion
Halve, peel and small-dice the onion. In a large pot, heat a drizzle of oil on medium-high. Add the pancetta* and onion. Cook, stirring frequently, 3 to 4 min., until golden brown.

Mise en place
Meanwhile, medium-dice the potatoes. Roughly chop the broccoli.

Start the chowder
To the pot of pancetta and onion, add the potatoes, cream, demi-glace, 2 ½ cups water (double for 4 portions), the spices and S&P; bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, 12 to 14 min., until the potatoes are tender.

Continue the chowder
To the pot of chowder, add the broccoli. Cook, partially covered, stirring occasionally, 3 to 4 min., until tender.

Finish the chowder
To the pot of chowder, add the peas and ½ the cheese. Cook, stirring frequently, 1 to 2 min., until the peas are bright green and tender.

Plate your dish
Divide the chowder between your bowls. Garnish with the remaining cheese and freshly cracked black pepper. Bon appétit!
