  • 1 Scallion
  • 60ml BBQ sauce
  • 540ml Lentils (canned)

Preparation

Bake the potatoes

  • Preheat the oven to 450°F.

  • Halve the potatoes lengthwise.

  • On a foil-lined sheet pan, toss with a drizzle of oil and S&P.

  • Arrange, cut-sides down, and roast, without flipping, 25 to 30 min., until browned and tender.

Mise en place

  • Meanwhile, thinly slice the scallion crosswise.

  • Core and grate the apples.

  • Drain and rinse the lentils.

  • Roughly chop the bacon.

Cook the bacon & lentils

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the bacon* and cook, stirring often, 2 to 3 min., until lightly browned.

  • Add the lentils, BBQ sauce, 2 tbsp water and S&P.

  • Cook, stirring often, 2 to 3 min., until warmed through.

Make the slaw

  • Meanwhile, in a large bowl, combine the sour cream, vinegar and S&P.

  • Add the cabbage, apples and ½ the scallion; toss well.

Plate your dish

  • Divide the potatoes between your plates.

  • Top with the bacon and lentils.

  • Garnish with the remaining scallion.

  • Serve the slaw on the side. Bon appétit!
