When life hands you lemons, make lemon butter tortellini. All it takes is a squeeze to jazz up these pasta faves, along with butter and grated Grana Padano. It puts sunny simplicity on the table in no time—or more precisely, in 10 minutes.

Preparation

Boil the pasta

  • Bring a medium pot of salted water to a boil.

  • Add the pasta; stir gently to separate.

  • Boil, stirring occasionally, 4 to 6 min., until al dente.

  • Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

  • Meanwhile, slice the cucumbers crosswise.

  • Juice the lemon.

  • Remove the stem ends of the string peas; halve crosswise on an angle.

Make the sauce

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the garlic salt, ½ the lemon juice, ½ the reserved cooking water and 2 tbsp butter (double for 4 portions).

  • Reduce to a simmer and cook, stirring often, 2 to 3 min., until combined and warmed through; season with S&P.

Make the salad

  • In a large bowl, combine the remaining lemon juice, 2 tbsp oil (double for 4 portions) and S&P.

  • Add the baby greens, string peas, cucumbers and S&P; toss well.

Combine the pasta

  • To the pan, add the pasta, ½ the cheese and S&P.

  • Cook, stirring often, 1 to 2 min., until warmed through and combined.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish

  • Divide the pasta and salad between your plates.
