Preparation

Cook the pork
In a medium pan, heat a drizzle of oil on medium-high. Add the pork*; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Sauté the squash
Meanwhile, in a second medium pan, heat a drizzle of oil on medium. Add the squash and sauté, 4 to 6 min., until tender; season with the remaining spices and S&P.

Make the slaw
Meanwhile, pick the cilantro leaves off the stems; roughly chop the leaves. Halve the radishes lengthwise; thinly slice crosswise. Juice the lime. In a large bowl, combine the cabbage, radishes, lime juice, ½ the cilantro, ½ the pepitas, 2 tbsp oil (double for 4 portions) and S&P.

Plate your dish
Divide the pork, squash and slaw between your plates. Top with the sour cream. Garnish with the remaining cilantro and pepitas. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
