Honey-Sesame Glazed Beef Mini Meatloaves
with Roasted Baby Bok Choy & Baby Potatoes
This ain’t your mother’s meatloaf! (Not that there was anything wrong with your mother’s meatloaf.) We’re taking a North American family classic into East Asian territory with soy, garlic and scallions, and a honey-sesame finish. Your mini loaves come with rice vinegar-dressed bok choy and garlicky taters.

- 510g Canadian-raised lean ground beef
- 900g Baby potatoes
- 3 Garlic cloves
- 2 Scallions
- 680g Baby bok choy
- 30g Panko
- 30ml Rice vinegar
- 60ml Soy sauce (low sodium)
- 14g Honey
- 6g Black & white sesame seeds

Preparation
Roast the potatoes
- Preheat the oven to 450°F.
- Medium-dice the potatoes.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring halfway, 20 to 25 min., until browned and tender.
Mise en place
- Meanwhile, quarter the bok choy lengthwise.
- Mince the garlic.
- Thinly slice the scallions crosswise, separating the white bottoms and green tops.
Prepare the meatloaves
- In a large bowl, combine the beef, white bottoms of the scallions, panko, ⅔ of the soy sauce, ⅔ of the garlic, 1 egg and S&P.
Roast the meatloaves & bok choy
- Form the beef into 4 small loaves and arrange on a second lined sheet pan.
- In a large bowl, combine the bok choy, a drizzle of oil and S&P.
- Bake the meatloaves, 4 to 6 min., until partially cooked.
- Add the bok choy and bake, 16 to 18 min., until the meatloaves* are cooked through and the bok choy are tender.
- Reserve the bowl.
Make the vinaigrette
- In a small bowl, combine vinegar, remaining soy sauce, 4 tbsp oil and S&P.
Finish & serve
- In the reserved bowl, combine the potatoes, green tops of the scallions, remaining garlic and S&P; stir well.
- Divide the potatoes, meatloaves and bok choy between your plates.
- Garnish the meatloaves with the honey and sesame seeds.
- Drizzle the bok choy with the vinaigrette. Bon appétit!
