Honey-Mustard Beef Meatball & Veggie Traybake
with Warm-from-the-Oven Garlic Bread
Did someone say garlic bread? No need to repeat the offer to get your household gathered (maybe they’ll even help prepare it). Oven-warmed ciabatta, smeared with garlicky butter, is the perfect sidekick—as if this sheet pan supper weren’t appealing enough! It features roasted ground beef meatballs, browned and round, glimmering under a glaze of honey and whole-grain mustard. Bonus: broccoli and Brussels sprouts share the baking tray, so cleanup is carefree.

Preparation

Mise en place
Preheat the oven to 450°F. Remove the root ends of the Brussels sprouts; halve lengthwise (quarter if large). Halve the broccoli if large. Place the honey pouch in a bowl of hot water to soften.

Prepare the meatballs
In a large bowl, combine the beef, ½ the garlic, 1 egg, ¾ of the spices and S&P. Form into 16 meatballs about the size of a golf ball.

Start the traybake
On a lined sheet pan (use 2 sheet pans if necessary), toss the Brussels sprouts and broccoli with a drizzle of oil and S&P. Add the meatballs and roast, stirring halfway, 12 to 14 min., until the vegetables are tender and the meatballs* are cooked through.

Finish the traybake
Meanwhile, in a small bowl, combine the honey, mustard (start with ½) and remaining spices. When the vegetables and meatballs are cooked through, remove from the oven and brush the meatballs with the honey-mustard mixture. Roast, 2 to 4 min., until glazed.

Make the garlic bread
Meanwhile, in a second small bowl, microwave 4 tbsp butter and the remaining garlic, in 15 sec. increments, until melted; season with S&P. Halve the ciabatta lengthwise. Bake, cut-sides up, directly on an oven rack, 5 to 7 min., until lightly toasted. Transfer to a cutting board and brush with the garlic butter; cut crosswise into thirds.

Plate your dish
Divide the traybake between your plates. Serve the garlic bread on the side. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
