Ground Pork Taco Bowls
with Roasted Chayote & Black Beans
Every taste and every texture is maxed out on Mexican comforts. Nibbly black beans, freshly sheared corn and chunks of roasted chayote (the perfect fall treatment for a crisp veg) nestle around warm and hearty spiced ground pork, with a shower of lime for acidity.

- 250g Canadian-raised lean ground pork
- 1 Garlic clove
- 1 Chayote
- 1 Ear of corn
- 1 Scallion
- 1 Lime
- 540ml Black beans (canned)
- 11g Mexican Moments spices (salt, chili powder, garlic, sugar, paprika, coriander seeds, black pepper, cumin, onion, oregano, lime oil)

Preparation
Roast the chayote
- Preheat the oven to 450°F.
- Peel and medium-dice the chayote.
- On a lined sheet pan, toss with a drizzle of oil, ⅓ of the spices and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender and beginning to brown.
Mise en place
- Meanwhile, mince the garlic.
- Juice the lime.
- Cut the corn kernels off the cob (shuck if necessary).
- Drain and rinse the black beans.
- Thinly slice the scallion crosswise, separating the white bottom and green top.
Cook the pork
- In a large pan, heat a generous drizzle of oil on medium-high.
- Add the white bottom of the scallion and sauté, 30 sec. to 1 min., until fragrant.
- Add the pork*; season with ½ the remaining spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.
- Transfer to a bowl and reserve the pan.
Warm the corn & black beans
- In the same pan, heat a drizzle of oil on medium-high.
- Add the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the corn, black beans, remaining spices and S&P.
- Sauté, 3 to 4 min., until beginning to brown.
- Add the lime juice; stir well.
Plate your dish
- Divide the pork, chayote, corn and black beans between your bowls.
- Garnish with the green top of the scallion. Bon appétit!
