Ground Pork Shepherd’s Pie
with Sautéed String Beans
Call the family to the table for a meal that’s custom-made for a cold night. Underneath a topping of buttery, cloud-soft mashed potatoes, there’s some hearty fare to be had. You’ll brown down ground pork with a good dose of veggies—carrots, onion and green peas are at your command. Serve this classic pie hot from the oven with sautéed string beans on the side, for some crisp contrast to all the coziness.

Preparation

Make the mash
Bring a medium pot of salted water to a boil. Peel and small-dice the potatoes. Add to the pot of boiling water and boil, 15 to 18 min., until very tender. Reserving ½ cup cooking water, drain and return to the pot. Off the heat, add 3 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

Mise en place
Meanwhile, preheat the oven to broil. Halve, peel and small-dice the onion. Small-dice the carrots. Remove the stem ends of the string beans.

Make the filling
In a large, high-sided pan, heat a drizzle of oil on medium. Add the onion and sauté, 2 to 3 min., until fragrant. Add the pork* and carrots; season with the spices. Cook, breaking up the meat, 5 to 7 min., until cooked through. Add the demi-glace and ½ cup water. Cook, stirring occasionally, 2 to 3 min., until slightly reduced. Add the peas; stir well.

Assemble & broil the shepherd’s pie
Transfer the filling to a medium baking dish. Wipe out and reserve the pan. Spread the filling with the mash. Place the baking dish on a sheet pan and broil, 3 to 5 min., until lightly browned. Let stand for 2 min. before serving.

Sauté the string beans
Meanwhile, in the reserved pan, heat a drizzle of oil on medium-high. Add the string beans and sauté, 1 to 2 min., until beginning to soften. Add 1 tbsp water and S&P. Sauté, 1 to 2 min., until crisp-tender.

Plate your dish
Divide the shepherd’s pie and string beans between your plates. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
