Ground Pork & Broccoli Stir-Fry
with Roasted Cashews
This homey stir-fry is sure to hit the spot. And you’ll get to that spot real quick, with 10 minutes and some confident moves. Throw that generous serving of juicy ground pork into a pan to cook with garlic and onions, while you microwave the carrots and broccoli to save time. Aromatize the works with a compendium of Asian-minded condiments, from sweet soy to rice vinegar to whiffs of nori, lemongrass and cayenne. Now cue the cashews!

- 15ml Minced garlic
- 50g Sliced red onions
- 200g Diced carrots
- 30ml Rice vinegar
- 25g Roasted cashews
- 30ml Sweet soy sauce
- 60ml Vegetable demi-glace
- 10g Hot Nori & Lemongrass spices (dehydrated vegetables, sea salt, seaweed, ginger, sunflower oil, lemongrass, crushed cayenne pepper)

Start the pork
In a large, high-sided pan, heat a drizzle of oil on medium-high. Sauté the garlic and onions, 30 sec. to 1 min., until fragrant. Add the pork; season with ½ the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until partially cooked.

Cook the vegetables
Meanwhile, in a medium bowl, combine the broccoli (halve if large), carrots and 1 tbsp water (double for 4 portions). Cover and microwave, 2 to 3 min., until tender. Drain any excess liquid from the bowl.

Make the stir-fry & finish the pork
To the pan of pork, add the vegetables and remaining spices. Cook, stirring occasionally, 2 to 3 min., until the flavours have combined. Add the demi-glace, soy sauce, vinegar and ¼ cup water (double for 4 portions). Cook, stirring frequently, 2 to 3 min., until the pork* is cooked through.

Finish & serve
Roughly chop the cashews. Divide the stir-fry between your bowls. Garnish with the cashews. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
