Roll up to win! Taquitos are a Mexican-inspired dish in which tortillas are wrapped around a savoury filling, landing them somewhere between enchiladas and tacos. Stuff the flour tortillas with a combination of smoky-sweet ground beef, zucchini and scallions. Once assembled, they’re topped with generous handfuls of shredded aged white cheddar and baked for a golden moment. Accompany the taquitos with a tomato and cucumber salsa and zesty, spiced sour cream for a touch of freshness.

Preparation

Mise en place
Preheat the oven to 425°F. Grate the zucchini. Zest and juice the lime. Thinly the scallions crosswise, separating the white bottoms and green tops. Small-dice the tomatoes and cucumber.

Make the filling
In a large, high-sided pan, heat a drizzle of oil on medium-high. Add the beef*; season with S&P. Cook, breaking up the meat, 4 to 6 min., until just cooked through. Transfer to a bowl. In the same pan, heat a drizzle of oil on medium-high. Add the zucchini and sauté, 4 to 5 min., until most of the liquid has evaporated. Add the beef, white bottoms of the scallions, all but a generous pinch of the spices and S&P. Cook, stirring frequently, 2 to 3 min., until combined.

Assemble & bake the taquitos
Drizzle a lined sheet pan with oil. Place the tortillas on a clean work surface. Divide the filling between the tortillas and tightly roll up. Place on the sheet pan, seam-sides down, and top with the cheese. Bake, 10 to 12 min., until the cheese has melted and the taquitos are golden brown. Let stand for at least 2 min. before serving.

Make the salsa & spiced sour cream
In a medium bowl, combine the cucumber, tomatoes, green tops of the scallions, lime juice, a drizzle of oil and S&P. In a small bowl, combine the sour cream, lime zest, remaining spices and S&P.

Plate your dish
Divide the taquitos between your plates. Top with the salsa. Serve the spiced sour cream on the side. Bon appétit!
