Ground Beef Shepherd’s Pie
with Butternut Squash, Peas & Aged Cheddar
Level up a family time classic with a few extra touches. Working aged white cheddar cheese into fluffy mashed potatoes gives the topping the right touch of tanginess. Our Mediterranean Shores seasoning blend takes the ground beef filling in a fun direction, with notes of sun-dried tomato, roasted garlic and rosemary. Jam more veggies in there with butternut squash and peas, and slip this heart-of-the-home dish into the oven for a golden finish.

Preparation

Make the mash
Preheat the oven to 450°F. Bring a medium pot of salted water to a boil. Peel and medium-dice the potatoes. Add to the pot of boiling water and boil, 14 to 16 min., until very tender. Reserving 1 cup cooking water, drain and return to the pot. Off the heat, add 4 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency. Add the cheese and S&P; stir well. Keep warm.

Mise en place
Meanwhile, halve, peel and small-dice the onion.

Start the filling
In a large pan, heat a drizzle of oil on medium-high. Add the onion and sauté, 1 to 2 min., until fragrant. Add the beef; season with the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until partially cooked.

Finish the filling
To the pan of beef, add the squash. Cook, stirring occasionally, 2 to 3 min., until beginning to soften. Add the peas, demi-glace and ½ cup water. Cook, stirring occasionally, 2 to 3 min., until slightly reduced and the beef* is cooked through.

Assemble & bake the shepherd’s pie
Transfer the filling to a large baking dish. Spread with the mash. Place on a sheet pan and bake, 12 to 14 min., until lightly browned on the edges. Let stand for 5 min. before serving.

Plate your dish
Divide the shepherd’s pie between your plates. Bon appétit!
