Whatever shape or size it comes in, we do love us a pizza pie. This week, our trusty dough is stretched out on a sheet pan to rise to the occasion, boasting crisped corners and a pliable consistency. Load it with garlicky browned ground beef, sautéed leafy greens and finely sliced roasted peppers. When it comes to a final melty topping, mozzarella is a great motivator—so get it on!

  • 90g Baby greens (baby spinach or kale)
  • 2 Roasted peppers
  • 200ml Tomato sauce
  • 60g Grated mozzarella
  • 454g Pizza dough

Preparation

Start the pizza
Preheat the oven to 450°F. Set the dough aside to come up to room temperature. On the back of a well-oiled sheet pan, roll or stretch the dough out to a ½ inch thickness for a thick crust or ⅛ inch for a thin crust. Bake on the bottom rack of the oven, 10 to 12 min., until partially cooked.

Cook the beef
Meanwhile, in a medium pan, heat a drizzle of oil on medium-high. Add the beef* and ½ the garlic; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. Transfer to a bowl. Wipe out and reserve the pan.

Sauté the spinach
In the same pan, heat a drizzle of oil on medium. Add the spinach, and remaining garlic and spices. Sauté, 1 to 2 min., until slightly wilted. Transfer to a plate.

Finish the pizza
Thinly slice the roasted peppers. When the dough is partially cooked, remove from the oven and spread with the tomato sauce. Top with the beef, spinach, roasted peppers and cheese. Bake, 6 to 8 min., until the cheese has melted. Switch the oven to broil, 2 to 3 min., until the cheese is beginning to brown. Transfer to a cutting board and cut into wedges.

Plate your dish
