Ground Beef & Veggie Stir-Fry
over Jasmine Rice
Non-stop nibbles! This generous stir-fry is packed with proteins from ground beef and edamame, sautéed along with broccoli, all coated in teriyaki glaze. It's a crowd-pleasing recipe the kids could take on with supervision (or they could just learn how to cook rice).

- 510g Canadian-raised lean ground beef
- 2 Heads of broccoli
- 20g Ginger
- 2 Scallions
- 150g Edamame (or green peas)
- 60ml Teriyaki glaze
- 320g Jasmine rice
- 24g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation

Cook the rice
- In a medium pot, combine the rice, 3 cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Start the beef
- Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the beef; season with the spices.
- Cook, breaking up the meat, 3 to 4 min., until lightly browned.

Mise en place
- Meanwhile, peel and grate the ginger.
- Cut the broccoli head into bite-size florets.
- Thinly slice the scallions crosswise.

Cook the vegetables & finish the beef
- To the pan, add the ginger and cook, stirring often, 30 sec. to 1 min., until fragrant.
- Add the broccoli and cook, stirring often, 1 to 2 min., until coated.
- Add ½ cup water and the teriyaki glaze. Cook, covered, stirring occasionally, 4 to 6 min., until the broccoli is tender and the beef* is cooked through.
- Uncover and add the edamame. Cook, stirring often, 1 to 2 min., until warmed through.

Plate your dish
- Divide the rice between your plates.
- Top with the beef and vegetables.
- Garnish with the scallions. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
