Grilled Veggie Souvlaki
with Feta Cheese & Tzatziki
How about you do the grilling, and the kids do the filling? They can help skewer cherry tomatoes, sweet pepper and zucchini, and then assemble this Greek treat by spreading warm pita with tzatziki and topping the veggies with tangy feta cheese.

- 280g Cherry tomatoes
- 1 Onion (or shallot)
- 1 Sweet pepper
- 2 Green zucchini
- 120g Garlic-cucumber yogurt (tzatziki)
- 120g Feta
- 4 Artisanal pita
- 8 Bamboo skewers
- 10g Mediterranean Shores spices (paprika, garlic, sea salt, roasted garlic, black pepper, sundried tomato, tomato, red bell pepper, mustard, oregano, natural flavour, rosemary)

Preparation

Mise en place
- Heat the BBQ on medium (or pan on medium), making sure to oil the grill first.
- Place the skewers in a shallow bowl; cover with water.
- Halve, peel and large-dice the onion.
- Halve, core and medium-dice the sweet pepper.
- Cut the zucchini crosswise into ½ inch pieces.

Prepare the vegetable souvlaki
- Drain the skewers and thread each one with the onion, sweet pepper, tomatoes and zucchini, alternating between each.
- Brush with oil; season with the spices and S&P.

Grill the vegetable souvlaki
- Add the vegetable souvlaki to the BBQ (or pan) and grill, 2 to 3 min. per side, until tender.

Grill the pita
- Drizzle the pita lightly with oil.
- Add to the BBQ (or pan) and grill, 30 sec. to 1 min. per side, until lightly browned.

Plate your dish
- Divide the pita between your plates.
- Spread with the tzatziki.
- Top with the vegetable souvlaki.
- Sprinkle with the cheese. Bon appétit!
